Lentil Soup in Tomato-Coconut Milk

20111013-200627.jpg I thought I’d make some lentil soup for dinner, but I’d never made it before, so I softened an onion, added a big tablespoon of fresh chopped garlic, cooked until soft.  Then added a large can of chopped tomatoes, brought that up to a simmer, then added a large can of tomato puree, a can of coconut milk, two cups of broccoli, a bunch of snap peas, a litre of vegetable broth, and two cups of water.  Brought it all to a boil, then down to a simmer, and cooked it until the lentils were tender.

Yummy!
