Saturday morning, I had a massage client, was done by 12:30, then John and I went grocery shopping. I made some roll-ups to take to the Foggy City Dancer’s Pre-Pride/Pre-Convention dance.
10 burrito sized flour tortillas
1.5 pounds sliced ham (or prosciutto)
2 8-oz packages cream cheese
2 red peppers
horseradish to taste (I used around 2-3 tablespoons)
salt to tasteroast the red peppers on the open flame of the stove (on low) until the skin is all black and crackling off. Remove from heat and set aside to cool. putting them in a paper sack to cool helps to get the skin off. when they are cool enough to handle, take a clean dish cloth and use it to peel the skins – the coarse texture of the cloth lets the skin come right off. Seed the peppers.
in the food processor, put the cream cheese and horseradish and process until smooth, then add the peppers in and blend it until the peppers are not completely pureéd, but still have a good texture. taste and add in more horseradish if desired, as well as a bit of salt.
spread a nice layer of the cheese pepper mixture on a room temperature tortilla, add enough ham to cover about two thirds of the tortilla ( I put them so the ham slices made a “V” shape), then rolled them up from the point of the “V” to the other side, and set aside. When all the tortillas have been rolled up, place them in the refrigerator to set up, and before serving, slice into 1/2 to 1 inch rolls.
this recipe makes between 100 – 120 rolls, depending on how you slice them.
Richard P, a fellow board member, picked me up at 5-ish, and we headed over to Glen Park BART, where we retrieved Michael Kellogg, the caller for the evening’s dance. He’s a good looking fella and friendly, too.
At the dance, we got the space decorated and ready for the dancers, and right at 7, we started. Michael Kellogg is an energetic and fairly innovative caller, and I felt challenged but not overwhelmed by his calling. His music choices were varied, ranging from some older country, more traditional square dance songs, to dance music from the 80s, 90s and today. I definitely enjoyed myself, and will try to get him back for another dance soon.
After the dance, we broke down the decorations, folded up the chairs and generally cleaned up. John gave me a ride home and he went over to the Lone Star, but I have two clients today, so I went to sleep to prepare for them. Oddly, I had my camera in my pocket the whole time, but didn’t take a single picture. Next time…
I’m thinking about going to B-Unit today after my second massage client. Maybe I’ll see you there!
