Inspired by Anthony Berno’s comment on my bacon in peanut sauce noodle dish the other day, I decided to try making some lunch with only a few ingredients. I cooked 3/4c of jasmine rice, and while that was cooking, I carmelized an onion in peanut oil, then added some coarsely chopped ginger root. When those were done, I put them in a bowl, added just a touch more oil, and with the heat up as hot as I could make it, took some cubes of pork tenderloin and let it cook as quickly as possible. As soon as the pork was just done, I added the onions back, a touch of soy sauce and a little hoi-sin sauce. Let that bubble for a moment, then served it over the jasmine rice. It was so amazingly good - the pork was crispy and so tender, the onions were sweet, and the ginger provided unexpected bites of heat. Sometimes a gentle nudge will open a door to a new realm.
