Well, this is the first dinner that I’ve cooked since I cut myself on New Year’s Day. I was actually a touch nervous slicing the onion for tonight’s meal. But, I soldiered through it and dinner was yummy.
I took a medium yellow onion, halved it and sliced it, two cubed chicken breasts, .75 pounds of green beans, .5 pounds of green, yellow, and red bell pepper mixture, .5 pounds of peas, and stir fried it all together. When nearly ready, I added 1 cup of orange juice, .5 cups of soy sauce, 1 tbsp of sugar, 1 tbsp of powered ginger, and 1 tsp of red pepper flakes, along with some corn starch – mixed it all together, and added it to the pan, cooking until thickened.
Served over rice,
